Dill Pickle Soup
Ingredients
- 6 cups beef broth
- 3 tablespoons flour
- 1 cup milk
- 1 egg yolk
- 2 tablespoons soft butter
- 4 lg. dill pickles, shredded or sliced very thin
- 1/2 cup liquid from pickles
- 3 cups cooked diced potatoes
Instructions
Bring the broth to a boil. Mix flour with milk until dissolved. Add to broth and stir. Remove from heat: beat egg yolk with butter. Add a little of the broth to the egg yolk mixture and beat well. Add the pickles, pickle liquid and potatoes. Heat, but do no boil. Garnish with a little dill if desired.
