Pork Tenderloin with Soy Ginger Marinade
"This recipe is a long standing family family classic. Pork Tenderloin is great in and of its own, but with this soy ginger marinade it soars to new heights. The marinade contains soy, ginger, vinegar, brown sugar, corn starch and garlic. It is out-of-this world good! When we make this recipe we love also making fingerling potatoes or a similar side that is great for soaking up all the extra soy ginger marinade. The marinade really steals the show and is the star of this dish."

It was funny, while I was browsing the site, I actually stopped and clicked on this recipe since it looked like black dried chili pepper in the photo. Then I realized it was one of those purple carrots! The marinade in this recipe is awesome - the soy sauce and the vinegar really make the meat tender, while the fresh ginger gives it a great authentic flavor. I love that the recipe makes two tenderloins, since I love to cook once and eat twice. The leftovers would make awesome wraps, sandwiches, or even on top of a salad. The marinade would be great for chicken as well.

Soy ginger marinades are the best. I have been looking for a soy ginger sauce and now I've found one! I am not going to add the brown sugar in the marinade I am going to use honey. Somehow I think that would work. I believe this is a good compliment to pork tenderloin.
