Pork with Apricot Glaze
Ingredients
- 500g pork fillets
- 60g butter
- 1 onion, sliced
- 2 tsps curry powder
- 2 tsps grated ginger
- 2 Tbsp apricot jam
- 2 Tbsp soy sauce
- 1 Tbsp lemon juice
Instructions
Melt butter in a pan, add onion, curry powder, ginger, jam, soy sauce and lemon juice, Stir over low heat until the jam has melted. Place pork in a greased shallow ovenproof casserole in a single layer, pour sauce over, bake uncovered in a moderate oven about 25 minutes or until pork is tender.
