Ingredients
- 4 cups potatoes, cooked and cubed
- 4 hard boiled eggs, chopped
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1 tablespoon vinegar
- 1/2 cup sweet and/or dill pickle, chopped
- 1 cup mayonnaise
- 1 teaspoon prepared mustard
- 1/2 teaspoon celery seed
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Instructions

Combine mayonaise, mustard, celery seed, vinegar, salt and pepper; mix well.

Combine potatoes, eggs, onion, celery and pickle.

Add dressing to potato mixture; mix lightly.

This is very much like my own potato salad (which I have developed over the last 50 years), with a few variations. I add 5-10 drops of Tabasco Sauce and a Tablespoon or so of sugar, omit the vinegar and chopped pickle and use sweet or dill relish. Sometimes also add diced pimento, for a little color. Cannot tell you the number of times I have been asked for my recipe, TMTC, and am often asked to bring it to get-togethers and bar-b-ques.
