Ingredients
- 8 medium potatoes
- 2 onions
- 1 teaspoon flour
- 10 strips bacon
- pepper, to taste
- 1 teaspoon sugar
- 1 cup vinegar + water
- celery seed, to taste
Instructions

Peel the potatoes and cut into slices. Boil until soft.

Fry bacon until semi-crisp. Remove from pan and save, leaving the fat in the pan.

Fry the flour, sugar, and celery seed in the fat until smooth and bubbly.

Add the vinegar-water and bring to a boil.
- Add potatoes, remove from heat, cover until ready to serve. Add bacon strips before serving.

This salad looks interesting. I would imagine that you could eat it hot or cold. It is true that this potato salad is full of hearty flavor with the fried bacon and onions. I would add some frozen peas before removing from the heat to add in a bit of sweetness.
