    Apple Pie Filling

    Ingredients

    • 4 1/2 cups sugar
    • 1 cup quick cooking tapioca
    • 1 tsp salt, optional
    • 2 tsps ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 10 cups water
    • 3 Tbs. lemon juice
    • 2-3 drops yellow/red food color - optional
    • 8-9 lb. tart peeled, cored sliced apples (16 cups)

    Instructions

    In a large saucepan blend the first five DRY ingredients. Stir in 10 cups water, cook on medium-high heat until thick/bubbly then cook 2 more minutes. Add apples. Stir constantly and bring to rolling boil, cook 1 minute. Ladle into jars 1/2" headspace. Seal. BWB pints/quart 25 min. 1 quart = 9" pie
