Apple Pie Filling
Ingredients
- 4 1/2 cups sugar
- 1 cup quick cooking tapioca
- 1 tsp salt, optional
- 2 tsps ground cinnamon
- 1/4 teaspoon ground nutmeg
- 10 cups water
- 3 Tbs. lemon juice
- 2-3 drops yellow/red food color - optional
- 8-9 lb. tart peeled, cored sliced apples (16 cups)
Instructions
In a large saucepan blend the first five DRY ingredients. Stir in 10 cups water, cook on medium-high heat until thick/bubbly then cook 2 more minutes. Add apples. Stir constantly and bring to rolling boil, cook 1 minute. Ladle into jars 1/2" headspace. Seal. BWB pints/quart 25 min. 1 quart = 9" pie
