Cucumber Relish
Ingredients
- 6 c coarse ground or chopped cucumbers
- 2 c coarse ground or chopped green bell peppers
- 2 c coarse ground or chopped red bell peppers
- 1 c coarse ground or chopped onion
- 2/3 c salt
- water
- 1 qt white or cider vinegar
- 1 c sugar, optional
- 2 tb mustard seed
- 1 tb celery seed
- 2 hot red peppers
Instructions
Yield: 6 Pints. Mix the ground or chopped vegetables with the salt and six cups of water. Let stand about 3 hours. Drain, rinse in cold water, and drain again well. Bring the vinegar, sugar, mustard seed, celery seed and red peppers to a boil in a large pan, stirring until the sugar dissolves. Boil 5 minutes, add the drained chopped vegetables and return to a boil. Remove from the heat immediately and turn into hot sterilized jars. Seal at once.
