    Pickled Beets

    Ingredients

    • 3 large beets, cooked (about 15-20 min) and peeled, then sliced
    • into 1/4 inch half moons
    • 1 cup reserved colored water from boiling the beets
    • 1 lemon juice
    • 1/2 grated lemon zest (organic)
    • 1/4 cup balsamic vinegar
    • 2 tbs honey
    • 1 tsp sea salt
    • 2 finely chopped serrano peppers

    Instructions

    Fill the sliced beets into a med sized jar (I used an empty mayo jar). Boil all the other ingredients for about 5 minutes and pour over the beets in the jar. Add a bayleaf and seal the jar. Refrigerate.
