Pickled Beets
Ingredients
- 3 large beets, cooked (about 15-20 min) and peeled, then sliced
- into 1/4 inch half moons
- 1 cup reserved colored water from boiling the beets
- 1 lemon juice
- 1/2 grated lemon zest (organic)
- 1/4 cup balsamic vinegar
- 2 tbs honey
- 1 tsp sea salt
- 2 finely chopped serrano peppers
Instructions
Fill the sliced beets into a med sized jar (I used an empty mayo jar). Boil all the other ingredients for about 5 minutes and pour over the beets in the jar. Add a bayleaf and seal the jar. Refrigerate.
