    Zesty Salsa

    Ingredients

    • 10 cups peeled, cored, chopped tomatoes
    • 7 1/2 cups peppers, chopped, about 3 pounds
    • 5 cups chopped onions
    • 1 1/4 cup cider vinegar
    • 3 cloves garlic, minced
    • 2 tablespoons cilantro, minced
    • 3 teaspoons salt
    • 1 teaspoon tabasco sauce, optional

    Instructions

    Combine all ingredients in a large saucepot. Bring mixture to a boil. Reduce heat and simmer 10 minutes. Pour hot into hot jars, leaving 1/4-inch head space. Adjust caps. Process 15 minutes in a boiling water bath. Yield: about 6 pints.
