Ingredients

  • 4 pounds boneless, skinless chicken breasts
  • 1 jar of your favorite spaghetti sauce
  • 1 sliced onion
  • 1 pint whole, fresh mushrooms
  • 1 can olives
  • 1 green pepper, sliced
  • 1 cup red wine

Instructions

  1. Make sure to chop the onions and the pepper into large pieces. Add them, along with the other ingredients into the pressure cooker with the exception of the olives.

  2. Follow the directions to pressure cook for 15 minutes. Be sure to set the valve the Pressure, and make sure the lid is locked.

  3. To serve, place the mixture over your choice of pasta. Slice the olives and sprinkle them over the mixture.

  4. Optionally, you can add a sprinkle of Parmesan cheese after the olives.

This is my kind of Italian dishes. I've never had chicken cacciatore before but I knew it had olives in it and always wanted to try it for that reason alone. Hmmmm...I'm hoping that the pressure cooker is if you want it to be cooked faster right? I'm in no hurry, so I'm hoping this will turn out ok in a crock pot.

So many wonderful Italian recipes have simple honest ingredients and Cacciatore is just one of those. Delicious and made simply and with ingredients that we all have in our homes. We do not have a pressure cooker so we made it the standard way, in a saucepan and using our own, homemade pasta sauce. Altogether a really good family meal.

Using a pressure cooker really speeds things up. They now have an Instant Pot that can be used as a pressure cooker. The texture of everything is just perfect. All the flavor gets locked in as it cooks. I love all the stuff in this dish. Chicken, mushrooms, olives, it is all good. It is a winner!

I didn't know what Cacciatore was so I looked at this recipe. I was very excited to see that it contained some of my favorite things - mushrooms and olives. I am definitely going to try this. It looks incredible. Also quick cooking time which is always a plus in my book.
