I was raised in West Texas (Midland) and I learned to cook therre. This is NOT an authenic cornbread of that area. I NEVER had cornbread like that. My son makes it this way. He got the recipe from a friend from New Jersey that made it by his family's recipe.I never heard of cornbread being made like this until he made it for me. That was about 1998. It is good. if you like spicy food, and sometimes this goes with some things very nicely but, I like my cornbread TEXAS style. NO flour in it at all.
