Blueberry Nut Bread

Ingredients

  • 2 cups flour
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder
  • 1 cup sugar
  • 1 cup blueberries
  • 1/2 cup chopped walnuts or pecans
  • 2 eggs, well beaten
  • 1 cup milk
  • 3 tablespoons oil

Instructions

Sift together the flour, salt, baking powder, and sugar. Add the berries and nuts. Combine the eggs, milk, and oil and stir in just to moisten. Pour into a wax paper-lined 9 x 5 x 3-inch loaf pan. Let stand 20 minutes. Preheat the oven to 350 degrees. Bake 1 hour, or until done. YIELD: One Loaf
