Easy Indonesian Fried Rice
Ingredients
- 2 kemiri or macadamia nuts
- 2 tsps salt
- 2 cloves garlic
- 2 Tbsp sesame oil
- 1/2 cup ground pork
- 1/2 medium onion, finely chopped
- 4 Tbsp shrimp, chopped
- 2 Tbsp crabmeat
- 2 eggs
- 5 cups cooked rice
- 2 Tbsp kecap manis (sweet soy sauce)
- 1 Tbsp kecap manis or regular soy sauce or fish-flavored soy sauce
- 2 Tbsp green onions, chopped
- 2 Tbsp ham pieces, matchstick sliced
- 2 Tbsp bawang goreng (fried onions)
Instructions
Mash the kemiri or macadamia nuts, salt and garlic in a mortar. Then place in a wok or frying pan and saute in sesame oil until light brown. Add the pork, onion, shrimp and crab, stirring constantly. When the meat is done, break in eggs and scramble lightly until done. Then add rice, mixing all together. When all the ingredients are well-mixed through the rice, mix in the soy sauces. Before serving, put on toppings. My added comments: Cook the rice the day before. Be sure to fluff it up well with a fork before refrigeration, or it tends to congeal. Nasi goreng is one of those "anything goes" type of dishes, where you can make substitutions, so don't worry if you don't have all the above ingredients, or you want to add something else.
