Fruited Golden Rice
Ingredients
- 1 cup raw long grain rice
- 1 Tbsp. oil or butter
- 2 cups water or chicken stock
- few stands saffron (optional)
- 1 tsp salt
- 1/2 cup soft raisins or softened dried cranberries
- 1/4 cup slivered almonds
- salt and pepper as desired.
Instructions
Heat raw rice in pan with oil or butter stirring constantly a few minutes to color rice a pale golden. Add the water or broth along with saffron and a tsp salt and bring mixture to a boil. Cover and simmer until rice has absorbed the liquid. Remove from heat and let sit 5 minutes. Add nuts and raisins and stir and fluff with a fork ( not spoon ) and season to taste. Serves 4.
