Indonesian Fried Rice
Ingredients
- 4 cups basmati rice, cooked
- 2 chicken breasts (or 1 pound of bacon) cut into small pieces
- 1 tbsp sesame oil
- 1 clove garlic, minced
- 1 large onion, chopped
- 1/2 cup Ketjap (Indonesian soy sauce)
- 2 large tbsp crunchy peanut butter
- 1 tsp sambal oelek
- 1 tsp Gado Gado (optional)
- 1 tsp curry
- 1/2 tsp ground cumin
- 1/2 tsp sweet basil
- 1 egg (optional)
Instructions
Heat oil in large skillet or wok and fry garlic and chicken, remove chicken and reserve. Fry onion until fully cooked and add chicken. Add all other ingredients except rice and egg and cook on low for several minutes mixing ingredients well. Add this mixture to the rice in a large bowl and mix very well. Serve with a scrambled egg on top. Goes great with sambal oelek(fresh ground chili peppers) to spice it up and Soerendeng for a bit of a different flavor.
