    Asparagus Vinaigrette

    Ingredients

    • 50 spears asparagus
    • 1 tablespoon Dijon mustard
    • 1/2 cup vinegar
    • 2/3 cup olive oil
    • Salt and pepper to taste

    Instructions

    Serves: 10. Steam asparagus about 10 minutes, until crisp-tender. Combine remaining ingredients, and use as dressing over asparagus.
