Mediterranean Chickpea Salad with Spanish Olives & Herbs
"I´m a sucker for salads and this Mediterranean Chickpea Salad with Spanish Olives & Herbs has just become my new go-to salad. Loaded with a great combination of flavors, super easy to make and done within minutes. As you all know chickpeas are a power food, loaded with fiber, high in protein and they´re inexpensive, you can´t beat that. To make this salad I used jarred chickpeas instead of making them from scratch, just because it made it a lot easier and faster to put everything together."

I normally do not use a lot of canned vegetables as their flavor tends to be washed out and their texture mushy, but with chickpeas I make an exception. Since they are quite dense to begin with, they seem to hold up quite well in the canning process and you are not left with a bunch of salty sludge at the bottom of the can like other beans. This is a fabulous way to use them, and so healthy!
