Black Bean Salad
Ingredients
- 15 ounces can black beans, rinsed and drained
- 2 ears worth of corn kernels, blanched in boiling water for 30 seconds
- 2 jalapeno peppers, diced, seeded (optional)
- 2 plum tomatoes, seeded and diced
- 1/2 cup diced red onion
- 2 cloves garlic, minced
- 1/4 cup minced fresh cilantro
Instructions
Juice of 1 lime olive or peanut oil to taste 2 tsp. southwest seasoning mix several dashes of Jalapeno sauce salt pepper to taste Mix together the first seven ingredients. Whisk together the second four ingredients and toss with bean mixture. Chill. Salt and pepper to taste. Makes 4 good sized salad servings Mix this half and half with rice and you've got a great vegetarian meal.
