Everyone is always looking to expand their easy salad recipes. Country Corn Salad is a refreshing dish to add to your collection and to serve at your next family party. Made with fresh vegetables, and a homemade vinaigrette, it is a great way to start out the evening meal. A great addition to your family dinner, it is even perfect when you are looking for a healthy snack.

Ingredients

  • 2 cups frozen corn, defrost
  • 1 tomato, chopped
  • 1 red bell pepper, sliced
  • 1/4 cup parsley, chopped
  • 2 scallions, chopped
  • FOR THE VINAIGRETTE:
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon dry oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 garlic clove, chopped

Instructions

  1. In large bowl mix corn, tomato, pepper, parsley and scallions.

  2. In small jar place all vinaigrette ingredients, close the lid and shake it to mix.

  3. Then dress the salad and serve. You can make more dressing and keep it in the fridge for up to 3 days.
