Country Corn Salad

Ingredients
- 2 cups frozen corn, defrost
- 1 tomato, chopped
- 1 red bell pepper, sliced
- 1/4 cup parsley, chopped
- 2 scallions, chopped
- FOR THE VINAIGRETTE:
- 1 tablespoon apple cider vinegar
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon dry oregano
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 garlic clove, chopped
Instructions

In large bowl mix corn, tomato, pepper, parsley and scallions.

In small jar place all vinaigrette ingredients, close the lid and shake it to mix.

Then dress the salad and serve. You can make more dressing and keep it in the fridge for up to 3 days.
