Fennel And Orange Salad
"This fennel and orange salad is a great seasonal winter salad. It's Italian, typical of Sicily and it’s super simple to make, ready in minutes and full of flavour! This salad is super refreshing and the perfect winter side dish or appetizer. It is easy and quick to make and its an inexpensive and seasonal salad recipe.The fennel is crunchy and it adds a nice licorice flavour and the orange is juicy, sweet and tangy. It is served with a simple dressing made of olive oil, the juice of the orange, salt and pepper. This is a traditional Italian recipe. The olives addition is a version of the traditional recipe which only includes fennel and orange. Other substitutions include raw red onion and pine nuts."

Ingredients
- 1 Fennel bulb, whole, sliced
- 2 Medium oranges, cut into segments
- 2 tablespoons Olive oil
- salt and pepper, to toaste
- 1 cup Black olives

Cut the fennel into thin slices, then place into ice cold water for around 5/10 minutes.

Cut the orange into segments without the peels as shown above, and squeeze the remaining of the orange to obtain the juice and put everything into a bowl. Season everything with olive oil, salt and pepper.

Drain the fennels and season with olive oil, the orange juice, salt and pepper and let infuse for 5 minutes or so.

Then plate everything my combining all the ingredients, including the black olives as topping. Enjoy!
