"This healthy couscous sardine salad combines freshly grilled sardines and tomatoes served on a bed of couscous along with some lightly pickled red onions and pepper chutney. It's delicious, healthy and filling as well as quick to make. If you can't find fresh sardines then another oily fish like mackerel would also be great or even salmon. The oily fish goes so well with the home pickled onions and the chutney. The juicy grilled tomatoes add a burst of sweetness too."
