Lemon Black Pepper Tuna Salad Recipe
"We love getting more seafood into our diet, and adding in tuna is a super easy way since it’s so readily available in cans.This tuna salad recipe is Paleo and Ketogenic (as well as low carb). It’s also AIP-friendly (follow the instructions in the recipe for AIP substitutions). (AIP stands for Paleo autoimmune protocol.) This recipe is super easy to make – it takes under 10 minutes from start to eat. So, it’s great for lunch or dinner or as a quick snack."

Ingredients
- 1/3 cucumber, diced small
- 1/2 small avocado, diced small
- 1 teaspoon lemon juice
- 1 can (4-6 oz or 100-150 g) of tuna
- 1 Tablespoon Paleo mayo (use olive oil for AIP)
- 1 Tablespoon mustard (omit for AIP)
- Salt to taste
- Salad greens (optional)
- Black pepper to taste (omit for AIP)

Mix together the diced cucumber and avocado with the lemon juice.

Flake the tuna and mix well with the mayo and mustard.

Add the tuna to the avocado and cucumber. Add salt to taste.

Prepare the salad greens (optional: add olive oil and lemon juice to taste).

Place the tuna salad on top of the salad greens.

Sprinkle black pepper on top.

A simple salad, made with ordinary ingredients but packed with delicious flavors! It is also so quick to make that I kept wondering whether I had overlooked some ingredients. I used tinned tuna, as per the recipe, but now I have some fresh tuna so am going to try the salad again using the fresh fish!
