Mexican Salad

Ingredients
- 1 (1-1/2-pound) Romaine Lettuce
- 1 (10-1/2-ounce) Cherry tomatoes
- 1 avocado
- 1 English cucumber
- 1 small red onion
- 1 (15-1/4-ounce) red beans
- 1 (15-1/4-ounce) sweet corn
- 1 bell pepper
- 1 (10-1/2-ounce) black olives
- 1 fresh cilantro

Combine all the Dressing ingredients in a small bowl, stir to combine and set aside.

Combine all the salad ingredients except cheese in a large bowl.

Add dressing and toss to combine

Garnish with cotija cheese on top and serve.
