Parsley and Tomato Salad
"One thing that grows super well in a hydroponic garden is parsley. I started it from seeds almost a year ago, and believe it or not, I kept chopping it up and it continuously grew for almost a year. I even had to cut down the roots a few times because they were overgrowing in the water bowl. Last week I decided to chop it off all and make this amazing parsley salad (tabouleh). I suppose that I could have just used 3/4 of it and it would have regrown, but I was kinda tired of trimming the roots, and not to mention that I was filling the water tank almost twice a day."

Ingredients

- 1 onion (finely chopped)
- 1 cup couscous
- Juice of one lemon
- 1 cup olive oil
- Salt and pepper to taste

Tabouleh is a favorite of mine and this is a nice recipe. It is also quick and easy to make which is always a bonus in any family kitchen! It's a good side dish too and we often include it at a barbecue or buffet. We added some chopped fresh garlic but that was only the only change made.
