Picnic Perfect Kale Quinoa Salad
"This is THE recipe for all the picnics, BBQs, holiday gatherings, and general tastebud satisfaction. Nutty protein-packed quinoa is tossed with superfood Redbor kale, toasted walnuts, dried cranberries (with unsweetened apple juice versus refined sugar), and juicy, sweet apples (think Honecrisp or Pink Lady). Then add some homemade cider vinaigrette (which is so easy to make) and you'll have a picnic perfect salad that everyone will love. Serve as a super tasty main dish or as a lovely side dish that also caters to those who are gluten-free, vegan, and/or vegetarian."

I love the apple cider vinaigrette dressing in this salad! I am actually a big fan of the raw organic unfiltered variety for it's robust flavor and many health benefits! The crunchy textures of the walnuts and the apples are very satisfying to the tooth. This would make a great vegetarian lunch option, and would also be great with some grilled chicken slices on the top for those meat lovers!
