Plum Ginger Chicken Salad
Plum Ginger Chicken Salad makes a nice side dish or sandwich filling. The ginger and plum blend splendidly together and create a unique flavored chicken salad. This is an excellent example for cold chicken salad recipes.
Ingredients
- 1 (6-ounce) package long grain and wild rice mix
- 2 cups cooked boneless chicken breast, cubed
- 1/2 cup green onions, sliced
- 4 plums, sliced
- 2 tablespoons vegetable oil
- 2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 1/2 teaspoon ground ginger
Instructions
- Prepare rice mix as directed; cool to room temperature.
- Combine rice, chicken, green onions and sliced plums in large mixing bowl.
- To prepare dressing, combine oil, lemon juice, soy sauce and ginger; pour over rice mixture and toss lightly. Chill until served.
