This delightful salad recipe is so close to caprese that I simply could not resist tossing in some sliced buffalo mozzarella as well! The children were thrilled because they could pick the 3 main ingredients (tomatoes, rocket/arugula and basil) from our veggie and herb garden. It is a delicious salad and a perfect accompaniment to virtually any meal.

i just bought some fresh arugula and tomatoes from a farmer's market and was wondering what type of salad to make for 4th of July weekend! This salad is perfect because of the secret ingredient- beer! Also, I grow homemade basil so I can add some of those fresh leaves to the salad, too. If you don't have enough space time, etc to grow a garden, try growing basil! It can be planted in a single pot indoors and actually grows like crazy! You'll have tons of it in no time.
