Wilted Spinach Salad With Avocado
"The wonderful flavors of chickpeas, tomatoes, healthy spinach, and avocado slices fused into one delectable homemade salad. Everybody loves a wilted spinach salad recipe. And this one is diet-friendly too. A perfect side dish idea for a great wine pairing dinner. You can add chopped shallots to add an additional tangy flavor. Our suggestion is to use white wine vinegar. But, you may use apple cider vinegar instead. Adding some lemon juice or grapefruit juice will add a cool citrusy flavor. "

Ingredients
- 1 lb cherry tomatoes
- 15 oz cooked chickpeas
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- 17 oz baby spinach
- 1/2 cup slivered black olives
- 12 oz avocado slices
- Salt and pepper to taste
Instructions

Preheat oven at 350 degrees Fahrenheit.

Slice cherry tomatoes in half.

Mix cherry tomatoes with chickpeas and place them on a baking sheet.

Drizzle with a tablespoon of olive oil, season with salt and pepper.

Bake for 15 minutes at 350 degrees Fahrenheit.

In a large bowl, whisk together the remaining olive and white wine vinegar.

Season the vinaigrette with salt and pepper.

Add baby spinach, hot vegetables, black olives, avocado slices in a large bowl.

Toss with the vinaigrette and serve.
