    Black Bean Relish

    Ingredients

    • 15-ounce can black beans, drained and rinsed
    • 1/4 medium red bell pepper, cut into 1/4-inch dice
    • 1/4 medium red onion, cut into 1/4-inch dice
    • 1 medium jalapeno pepper, seeded and cut into fine dice
    • 3/4 cup loose-packed cilantro leaves, coarsely chopped
    • 1 cup frozen corn kernels, defrosted
    • 1/2 teaspoon ground cumin teaspoon cayenne pepper
    • 1/4 teaspoon chili powder
    • 1/4 cup Key lime juice
    • Salt and fresh-ground black pepper, to taste

    Instructions

    Mix all the ingredients together in a large nonreactive bowl. Can be made several hours ahead and refrigerated. Stir occasionally and remove from the refrigerator about 30 minutes before serving. Makes about 3 1/4 cups.
