Ingredients
- 1/2 cup sugar
- 2 tablespoons flour
- 2 tablespoons cornstarch
- 3 cups milk
- 3 egg yolks, beaten
- 3 tablespoons butter
- 1/4 teaspoon vanilla
Instructions
-
In a medium heavy-bottom saucepan, stir together sugar, flour and cornstarch then add milk and bring to a boil over medium high heat, stirring frequently. Once mixture begins to boil, reduce heat to a simmer and continue to stir and cook until thick and smooth, about 10 minutes. Use a whisk at first, then change to a heat-proof rubber scraper and be sure to scrape the bottom, corners and sides of the pan so it does not burn.
-
When the mixture is thick enough to mound on a spoon, remove from the heat and, while stirring, add the beaten yolks slowly. Return to the heat over low and cook another 2 3 minutes. Off the heat, stir in the butter and vanilla.
