Samba Dog Relish
Ingredients
- 1 large hard boiled egg, peeled and cut into 1/4 inch dice
- 1 fresh, ripe medium tomato, seeded and finely chopped
- 1/4 cup corn kernels, freshly cooked or drained canned
- 1/4 cup cooked fresh or frozen green peas or drained canned
- 1/4 cup pimiento-stuffed green olives, cut into 1/4 inch dice
- 1/4 cup pitted black olives, cut into 1/4 inch dice
- 1/4 cup diced red onion
- 3 tablespoons extra-virgin olive oil
- 1 1/2 tablespoon red wine vinegar, or more to taste
- salt and freshly ground black pepper to taste
Instructions
Combine all the ingredients in a bowl and toss gently but thoroughly to mix. Taste for seasoning, adding vinegar or salt and pepper as necessary; the mixture should be highly seasoned. Makes enough for 8 big dogs.
