"This is a quick and easy cashew pesto with a Thai twist. On top of the usual pesto ingredients, the recipe calls for some Thai red curry paste which gives the pesto an extra kick anyone would enjoy. Without making the pesto too hot, the curry flavor blends really well with the basil. You could make this ahead of time and freeze in an ice cube tray for up to 3 weeks.
