Speaking as a fellow taco addict, I really like this simple recipe. I added a bit of chopped green pepper as well as some chopped jalapenos to the mix. Garnishing the top with some additional cheese and salsa is a really good idea. I might try making this next time with some black bean and corn salsa instead of plain salsa.
