This would be a great thing to bring on a picnic, or as a light lunch. I might just grab a fresh pineapple, the next time I see them on sale, since I think they taste so much sweeter and fresh than the canned. A really great summer recipe!

This looks like a delectable salad. I like the fact that you can keep it for up to at least 5 days. That means that you can grab a healthy snack if you are feeling peckish or make ahead of time to save time when you make other meals or need a take along dish to a party.
