I think this is a perfect idea for the leftover mashed potatoes I have because I always make a ton and have a bunch left over the next day. My kids are always saying I need more potato recipes and I know that they would devour these if I made them. Thanks for the inspiration!

These potato bombs look great. I like the concept of the garlic potatoes as I can imagine that makes them packed with flavor. I think they would taste awesome with the bacon bits and what about topping it off with a bit of sour cream too. You could even add some chunky guacamole or salsa. Yummm!

Here is a nice easy, quick recipe that can be put together at the last minute if you need to. I have had packaged garlic potatoes before and really like them as is. I think the addition of cheese and bacon bits (if you prefer them) would make them taste even better! I think baking them is a great idea and they really do look like little loaded potatoes!
