Although these little guys might be a little more work to prepare than a large version, with all the little slices and such, they are definitely worth the extra effort. People will be really impressed with the results. They are just so fun! I have found that kids seem to really like when foods are small like themselves!

I am always searching for different appetizers to serve when friends and family gather. These Mini Loaded Hasselback Potatoes are perfect for next weekends gathering. I like the versatility of this recipe and I am thinking of different toppings that will make for a crowd pleasing variety. I like the authors suggestion of chili and shredded cheese, and chunky guacomole and pico de gallo salsa, and of course the standard bacon and sour cream.
