Double Cheeseburger
with Bacon Wrapped Pickles
This Double Cheeseburger with Bacon-Wrapped Pickles is a delicious and savory burger that features two juicy beef patties sandwiched between slices of melted cheese, topped with crispy, tangy bacon-wrapped pickle chips and burger buns that are toasted and slathered with my favorite burger sauce. Ingredients
- Bacon-Wrapped Pickle Chips
- 16 pickle chips
- 8 slices bacon, cut in half widthwise
- 2 teaspoons (6 g) your favorite BBQ rub (I used Pit Boss Honey Sriracha Rub)
Burger Sauce- 1/4 cup (60 g) mayonnaise
- 2 tablespoons (30 g) mustard
- 3 tablespoons (45 g) ketchup
- 2 tablespoons (30 g) relish
Burger- 2 pounds (908 g) ground chuck (80/20 blend)
- Salt and pepper
- 8 teaspoons (24 g) garlic powder
- 8 slices Havarti cheese
- 4 brioche burger buns, toasted
- Your favorite toppings (such as lettuce, tomatoes, onions, hot pepper rings, sautéed onions)
INSTRUCTIONS

Preheat your pellet grill to 275°F (135°C). Line a baking sheet with parchment paper, and place a wire rack on top.

With a paper towel, pat the pickles chips dry. Try to remove as much liquid as possible. Wrap each pickle chip with a half strip of bacon, and place them, bacon seam-side down, on the prepared wire rack. Season the top of each bacon-wrapped pickles with the BBQ rub.

Place the baking sheet on the grill and cook for 45 minutes, or until the bacon is to your liking. Remove the baking sheet from the grill, and transfer the pickle chips to a plate. Set it aside.

Meanwhile, prepare the Burger Sauce. In a medium bowl, combine the mayonnaise, mustard, ketchup and relish. Cover and refrigerate until ready to use.

Increase the temperature of the grill to 450°F (232°C).

Using your hands or a burger press, form the ground beef into eight equal patties about ¾ inch (2 cm) thick. Season the patties on both sides with the salt, pepper and 1 teaspoon of garlic powder per patty.

Place the burgers on the grill and cook for 4 minutes per side until they reach an internal temperature of 145°F (63°C) for medium rare, or to your preferred doneness. Top each patty with a slice of Havarti cheese, and allow the cheese to melt, 2 to 3 minutes. Remove the burgers from the grill, and transfer them to a platter.

Assemble the burgers by spreading some of the Burger Sauce on the top and bottom buns, then place four Bacon-Wrapped Pickle Chips on each bottom bun. Place two burger patties on top of the pickles followed by your favorite toppings. Finish by placing the top bun on the toppings and serve.
