- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 package taco seasoning, low sodium preferred
- 1/2 package ranch seasoning
- 1 tablespoon oregano
- Salt and pepper
- 1 red pepper, diced
- 1/2 white onion, diced
- 1 can diced green chilis
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can Ro-Tel tomatoes and green chilis
- 1 cup frozen corn
- 2 cups chicken broth, low sodium preferred
- Shredded cheese, for serving
- 8 ounces Velveeta cheese
- Tortilla chips, for serving
- Sour cream, for serving

Instructions
Follow these easy instructions to make this Mexican-style soup recipe.

Heat olive oil over medium-high heat. Add ground turkey and begin to brown. Add seasonings while browning the meat.

When meat is cooked through, add red pepper and onions. Sauté for 5 minutes until vegetables are soft.

Add remaining ingredients except the cheese. Bring to a boil and then reduce heat to low and simmer for 10 to 15 minutes.

Turn the heat off, and add the cheese in portions, stirring in each addition.

Serve with sour cream, cheese, and tortilla chips.

Omg this sounds so delicious! I absolutely love everything about tacos but I've never heard of taco soup before, and now that I have being a soup lover, you can bet it'll be on the top of my soup list. Ground turkey is perfect for keeping it less greasy too and the beans will no doubt make it super hearty. I'm thinking you can even add some shredded lettuce and diced tomatoes on top to get the full effect if you wanted to.
