    Slow Cooker Sausage Pepper Soup

"All the flavor of a sausage and pepper sandwich in a healthy soup instead. Use turkey sausage, sweet peppers, onions and tiny potatoes for a low calorie meal. Throw all the ingredients into a slow cooker. I didn’t brown anything first. Simply dump the ingredients in your slow cooker, put on low for 4 hours and come back to a delicious bowl of soup for dinner. When you are craving a certain type of food, make it into a soup."

I love making italian sausage and peppers for my family, but have never thought of making it a soup - what a great idea! My family loves all types of italian soups like minestrone and this a great new one to try! I love that it can be made in the slow-cooker, and I bet it's delicious made the day ahead as well. Add some nice crusty bread and some salad, and this makes the perfect weeknight meal. Delicious, hearty and healthy!

Sausage and peppers together are really good. I always grow peppers in my garden and freeze my extras and this would be a great way to use some of them up. I don't know if I will use the turkey sausage, because not all stores around here carry it. I might find some chicken sausage though.

I come from a family of Italians, so the idea of a soup with the flavors of sausage and peppers just makes sense. I have never seen that particular brand of turkey sausage before - Is it a precooked or a raw meat product? The use of the tiny mixed potatoes seems to cut down on the required prep work, but I just used redskins that I peeled and diced since they were on sale and much more economical than the special little guys.
