King Ranch Chicken Soup
This take on a cheesy chicken tortilla soup is inspired by a famously good casserole recipe!
If you've ever had a king ranch chicken casserole before, you'll have an idea of what this soup is all about.
It's basically just a deconstructed version of the casserole in a hot and comforting bowl of soup. It's got a little kick from some chili powder, but isn't too overpowering, and if you're not much for spicy foods, it's easy to leave it out.
Chicken breast, a variety of delicious spices, and plenty of Velveeta make this soup creamy, cheesy, and full of flavor. Once you try this King Ranch Chicken Soup recipe, it may become one of your family's new favorite dishes!

Ingredients

- 1 large Roma tomato, diced
- 1/4 red onion, diced
- 2 tablespoons fresh lime juice
- 1 tablespoon finely chopped fresh cilantro (optional)
- finely chopped fresh cilantro (optional) pinch of salt
- Soup
- 2 tablespoons olive oil
- 1 medium red onion, finely diced
- 1 stalk celery, finely diced
- 1 cup chopped baby carrots
- 1 cup chopped crimini mushrooms
- 3 cloves garlic, very finely minced
- 2 pounds skinless boneless chicken breast, cut into cubes
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 (28-ounce) can crushed tomatoes, undrained
- 4 cups chicken broth
- 2 cups half and half
- 1 (4-ounce) package cream cheese, cut into small cubes
- 2 cups Velveeta cheese, cut into small cubes
Instructions

In a large dutch oven, heat the oil and saute onion, celery, mushrooms, peppers, and garlic 2-3 minutes until vegetables are transparent. Toss chicken with chili powder, cumin, salt and pepper and add to the pan. Saute, stirring frequently, for about 5 minutes until chicken is cooked through.

Add tomatoes and broth bring to a boil, then lower to a simmer for 20 minutes.

Remove from the heat and stir in cream cheese and velveeta. Return to a simmer and stir until cheese is melted and soup is smooth. Remove from the heat once again and stir in half and half. Taste and adjust seasonings as desired.

Serve ladled into individual bowls, topped with a cilantro, raw onion, tortilla strips and lime wedges at the table to add to each serving as desired.

Really good, the way I fixed it. The ingredients call for 1 cup chopped baby carrots. But the instructions don't mention carrots at all, instead it says peppers. So which is it supposed to be? I made this at the office, using baby carrots. I forgot the spices so I used a package of taco seasoning. And instead of the crushed tomatoes I used Rotel tomatoes with chilis. And I thickened it with a little corn starch mixed in with the half and half. It was a real hit. I make soup for the office once a week. The guys all said that this is one of their very favorites.

Yummy this chicken soup looks super delicious. I have been looking at chicken soup recipes. I wonder what the cheese in it would taste like? I really like the look of this recipe. I think I would prefer to use left over, cooked chicken shredded. I think that would be easier to eat. I would add it in after I sauted the vegetables.

Well, this does sound kinda interesting but I'm definitely not a fan of soups with cheese in it. I would think with the cheese it would be more like a dip but, without the Velveeta and using the cream cheese on its own, it should have more of a creamy soup-like consistency that sounds more appealing to me.

Do not let the list of ingredients deter you because otherwise you will be missing out on this exceptionally good King of Chicken Soup! We did not have any celery so I left it out and I used chicken thigh meat instead of breasts. The overall flavor of the soup is so good with the chili, cumin and coriander doing the most fabulous things in the background. Add crunchy fresh Italian bread and it is a great meal!

This looks good, but I hate Velveeta. It has to be real cheese. Maybe I could figure out how to substitute another cheese for the Velveeta. Since it has cream cheese, that might help another cheese melt into the soup without clumping up. I love all the spices in it. I love a lot of spice in everything.

Leave a comment...One I'm going to try. I think I'd follow the written recipe instead of what is shown in the video. Same ingredients, just done in a different order. Spice mix is a good one for flavorful soup. I'll have to share with my friends, that's a lot of soup for one person.

King ranch chicken as a soup? Sounds great! I like that it uses velveta cheese. I guess you could use tortillas as a side. There seems to be alot of ingredients, but it looks very good. I think I will give it a try soon. This will be cozy and warm on cold winter nights.I will share this with my friends!
