Artichoke Soup
Ingredients
- 2 8-oz cans artichokes chopped drained
- 2 potatoes peeled and cut up
- 6 cups of chicken broth or
- vegetable stock
- salt and pepper
- 1 tbs chopped cilantro ( garnish )
- cream as desired
Instructions
Place the artichokes , potatoes and broth in a pan and cover and bring to a boil. Lower heat and simmer and cook until potatoes are tender. Cool a bit and puree mixture in a blender or use a hand blender. Season to taste. This is a basic recipe like vichyssoise. Serve warm or chilled .Garnish with cilantro. Serves 4
