    Black Bean Soup

    Ingredients

    • 1 lb. dried black beans
    • 6 cups vegetable stock
    • 3 cloves garlic, crushed and chopped
    • 3-4 chili peppers
    • 1 cup onion, chopped
    • 1 cup bell pepper, chopped
    • 1 sweet potato, julienned
    • 2 tb. safflower oil
    • 1/2 teaspoon oregano
    • 1/2 tsp black pepper
    • 1 clove garlic, crushed and chopped

    Instructions

    Soak beans overnight. Drain. In soup pot, bring stock to boil and add beans, garlic and chili peppers. Boil for 1-1/4 hours. In pan put oil, onion, bell pepper, and potato. Saute 2 minutes. Add to beans. Add remaining ingredients and simmer 1 hour. This can be served either as a soup or as a stew on tortillas.
