    This soup recipe sounds so good I can't wait to try it! My family loves butternut squash and I always try to stock up in the fall when they are on sale. I also love ginger but have never used ginger juice. I bet it gives this soup a great extra kick of ginger taste! Served with a salad or french bread, this would make a great lunch or light dinner. I also love rosemary and the beautiful colour of this soup. Yummy!

    This soup has beautiful color and is so healthy. I grow a lot of both butternut and acorn squash in my garden each year, and I usually end up with so much of it in the fall that I never know what to do with it all. This could be modified to be completely vegan very easily as well. It would be great as a first course, and I plan to serve it at my next dinner party!
