Cheesy Beer Soup
Cheesy Beer Soup is a perfect soup recipe for any beer and cheese lover. Made with fresh potatoes and vegetables this hearty soup is perfect for a game day snack. Dip your favorite bread or crackers in it and enjoy.
Ingredients
- 4 cups chicken broth
- 1 1/2 cup peeled, diced potatoes
- 1 cup carrots, chopped
- 1/2 cup celery, chopped
- 1/2 cup green pepper, chopped
- 1/4 cup onion, chopped
- 2 cans (10.75-ounces) cream of chicken soup
- 1 cup beer
- 16 ounces jar pasteurized process cheese spread
Instructions
- Put broth, potatoes, carrots, celery, green pepper, and onion into a pot. Bring to a boil.
- Lower the heat and simmer, covered, for 10 min. The veggies should be tender.
- Add cheese spread, soup and beer and stir until the cheese is melted. Heat gently, stirring constantly. Do not boil.
