Chicken Soup with Cheese Tortellini

Ingredients
- 2 tablespoons unsalted butter
- 1 onion, diced
- 1 cup carrot, diced
- 1 cup celery, diced
- 2 cloves garlic, chopped very fine
- 1 whole chicken (about 4 pounds)
- 2 quarts chicken stock
- fresh basil to taste
- fresh oregano to taste
- fresh parsely to taste
- salt and pepper to taste
- 1 large potato, cut into small bite-sized cubes
- 1 pound cheese tortellini
Instructions
- In a large soup or stock pot, melt the butter and saute the onion, carrot, celery, and garlic until the onion is tender.
- Add the chicken, chicken stock, basil, oregano, parsley, salt, and pepper. Make sure the chicken is fully submerged in liquid. You may need to add water to keep chicken covered while it cooks.
- Bring to a boil and cook until chicken is very tender and easily removes from the bone.
- Remove the chicken and remove skin and bone. Shred the chicken into small pieces.
- Return the chicken to the pot and add the potato. Simmer slowly for another 30 minutes.
- Add the tortellini and simmer until the tortellini are all floating. Salt and pepper to taste.
