    Clam Chowder with Corn

    Put your feet up and enjoy a nice bowl of clam chowder with corn. Even if you can't watch the ocean or do your own clam digging, you can get a taste of east coast living with this easy one pot dinner.

    Ingredients

    • 1/4 pound salt pork, diced
    • 2 onions, peeled and chopped
    • 2 celery stalks, sliced and chopped
    • 2 potatoes, peeled and chopped
    • 1 cup clam stock
    • 1 cup corn, cooked
    • 2 cups milk
    • 1 cup cream
    • 2 cups minced clams
    • salt and pepper to taste

    Instructions

    1. Fry pork in soup kettle until crisp. Remove pork with slotted spoon and set aside.
       
    2. Saute onions and celery in fat until tender. Add potatoes and stock and simmer, covered, 15 minutes.
       
    3. Add corn, milk, and cream. Simmer, uncovered, for 10 minutes.  Do not boil.
       
    4. Add clams and heat through. Season with salt and pepper.  Garnish with reserved salt pork.
