Country Style Zucchini Soup

Ingredients
- 3 tablespoons olive oil
- 1 clove chopped garlic
- 3 medium-size potatoes, peeled and cut into half-inch cubes
- 1 onion, sliced
- 2 stalks celery, sliced into half-inch pieces
- 2 tablespoons fresh parsley
- 1 teaspoon oregano
- 6 cups rich beef stock
- 1 large tomato, peeled and cut into half-inch pieces
- 1 pound zucchini, cut into half-inch slices
- 2 teaspoons salt
- 6 teaspoons Parmesan cheese, grated
Instructions
- In a large saucepan, heat oil and brown garlic. Discard garlic.
- Add potatoes, stir to coat, and cook for about 5 minutes.
- Add onion, celery, parsley, and oregano, and cook until onions are softened.
- Add stock, tomatoes and salt and bring to a boil.
- Reduce heat and simmer until zucchini is tender.
- Pour soup into individual bowls and sprinkle freshly ground pepper and 1 teaspoon Parmesan cheese over each serving.

So, like always, I omitted the celery (do not like the taste) and used sweet potatoes cos we try to eat low carb. I love zucchini, partly for the taste and partly because it is so versatile. One can virtually do anything at all with it. This soup is delish and we all voted to have it again soon.

Hello Member 5397475, Sorry for the confusion, I've updated this recipe to remove that ingredient. Since we get many of our recipes reader submitted, sometimes mistakes like that are missed. No marrow in this recipe. Thanks!
