Cozy Up Clam Chowder

Ingredients
- 5 bacon strips, cut thick
- 1 onion, diced
- 1 cup clams
- 3 tablespoons all-purpose flour
- 1 1/2 cup clam juice
- 1 1/2 cup potatoes, cut into bite-sized pieces
- 4 bay leaves
- 2 tablespoons tarragon
- 1 tablespoon ground pepper
- 1 cup celery, chopped
- 4 cups milk, room temperature
- salt and pepper to taste
Instructions
- Slice bacon into small pieces and cook slowly in a large frying pan. Once bacon is crisp, remove and reserve for later. Add onions and clams to bacon fat and cook slowly till onions are translucent.
- Add flour and stir until blended. Add clam juice, potatoes, 1/2 of the bay leaves, 1/2 of the tarragon, ground pepper, and celery. Cover and simmer in low heat until potatoes are cooked.
- Add milk, remaining bay leaves, cooked bacon, and remaining tarragon. Cover and simmer for another 15 minutes.
- Let chowder cool to room temperature. Cover and refrigerate overnight.
- When ready to eat, reheat the soup and add salt and pepper to taste.
