    Day After Thanksgiving Soup

    Don't just throw away that left over turkey. Make soup out of it! Get your dollars worth from that bird with this simple and hearty soup recipe. Your family will eat up Day After Thanksgiving Soup.

    Ingredients

    • 6 cups cold water
    • 1 cup celery leaves
    • 2 sprigs of parsley
    • 1 large onion, sliced
    • 1 large carrot, sliced
    • 2 teaspoons salt
    • 3 peppercorns
    • 1 bay leaf
    • 1 teaspoon poultry seasoning

    Instructions

    1. Break apart turkey or chicken carcass and place in large kettle along with skin and trimmings. Add all ingredients. Bring to boil, cover, reduce heat and simmer for 3 hours.
       
    2. Remove bones. Strain through fine sieve or cheesecloth in a colander.
       
    3. Cool quickly and refrigerate. Remove fat. Add frozen vegetables and leftover turkey.
