Day After Thanksgiving Soup

Ingredients
- 6 cups cold water
- 1 cup celery leaves
- 2 sprigs of parsley
- 1 large onion, sliced
- 1 large carrot, sliced
- 2 teaspoons salt
- 3 peppercorns
- 1 bay leaf
- 1 teaspoon poultry seasoning
Instructions
- Break apart turkey or chicken carcass and place in large kettle along with skin and trimmings. Add all ingredients. Bring to boil, cover, reduce heat and simmer for 3 hours.
- Remove bones. Strain through fine sieve or cheesecloth in a colander.
- Cool quickly and refrigerate. Remove fat. Add frozen vegetables and leftover turkey.
