Easy Potato Soup
Ingredients
- 4 (medium) peeled potatoes
- 1 onion chopped
- water
- salt
- 1/2 to 1 cup whipping cream
- salt
- pepper
- chopped parsley or chopped green onion
Instructions
Cut about 4 (or more) peeled potatoes into pieces and rinse. Chop 1 onion (or more if you like onions) and place in pot with potato pieces.. Add water until it covers 1/2 to 3/4 the depth of the potatoes and onion pieces. Add a little salt. Simmer until the potatoes are tender. Remove from heat and do not drain. Add 1/2 to 1 cup whipping cream. Add salt and pepper to taste. Garnish with chopped parsley or chopped green onion. And serve right away. Use a low setting to heat soup. Never bring soup to a boil after you add the cream.

This is an old time recipe that we made years ago. We added a can of tomatoes instead of the whipping cream. Great on a cold winter day
